Chipotle Chili Peppers are a good source of ascorbic acid (vitamin C) and pyridoxine (vitamin B6). They also contain a compound called capsaicin, which gives them their spiciness and many health attributes. They are antimicrobial protecting the stomach and preventing ulcers, bosting metabolism, increasing fat burn and decreasing appetite. Capsaicin has anticancer attributes, offers pain relief, as an antimicrobial, prevents harmful bacteria growth in the gut, and has a beneficial effect on blood sugars, cholesterol and blood pressure. Research shows there is little to no reduction in capsaicin from drying or smoking the Jalapeno peppers.
Cumin is a known antioxidant with potency greater than ascorbic acid (vitamin C) for fighting stress. It is also rich in calcium, iron, and magnesium, which account for its effectiveness in weight loss, cholesterol control, digestive disorders including irritable bowel syndrome.
Caraway is an excellent source of beta-carotene (vitamin A), potassium, magnesium, calcium, phosphorus, niacin (vitamin B3), folate (vitamin B9). The spice’s antioxidant effect is linked to the reduction of free radicals that contribute to heart disease, atherosclerosis and high blood pressure. Caraway also has a significant amount of lutein and zeaxanthin, key in supporting eye health.
