In this interactive workshop, you’ll learn how different olive oils and balsamics behave in the kitchen — and which ones truly match your palate.
We’ll taste bold and delicate oils side-by-side, explore how sweet and savory balsamics interact, and break down when to match intensity and when to contrast it.
By the end, you’ll pair with confidence, build better vinaigrettes, marinades, and sauces, and drizzle with intention.

A sommelier-led deep dive into the art of tasting extra virgin olive oil.
Guided by Suzanne, a certified olive oil sommelier, you’ll learn to evaluate quality through aroma, balance, and that signature peppery finish—while exploring a range of oils from delicate to robust. Through a curated sensory experience, you’ll engage your sense of smell to identify the fresh, green aromas that define exceptional olive oil, as well as the defects that signal poor quality.
Along the way, we’ll touch on the rich history of olive oil and its role in the Mediterranean lifestyle, as well as the naturally occurring compounds that contribute to its distinctive flavor and widely recognized benefits.
Note: This class replaces Olive Oil & The Mediterranean Diet for the summer months.
